INGREDIENTS

  • 185g unsalted butter, cut into small chunks, plus extra for greasing
  • 185g best dark chocolate, broken into pieces
  • 3 large eggs
  • 275g golden caster sugar
  • 85g plain flower
  • 40g cocoa powder
  • 5 fondant filled eggs
  • 150g mini chocolate eggs
  • You will also need a few fluffy chenille Easter Egg chicks to decorate (optional)

METHOD

Step 01.

To make the chocolate mixture, melt butter and chocolate together in a heatproof bowl over simmering water or in the microwave at 30-second intervals until melted. Allow the melted chocolate mixture to cool to room temperature before using.

 Step 02.

Preheat the oven to 180C/160C fan/gas 4. Grease a 20cm square tin with butter and line it with two long strips of folded baking paper or foil, one placed vertically and the other horizontally, allowing overhang on each side. Additionally, line the base with a piece of baking paper to prevent sticking and aid in removal later.

Step 03.

In a large bowl, crack the eggs and add the caster sugar. Using an electric mixer set to maximum speed, whisk the eggs and sugar for approximately 5-8 minutes or until the mixture appears thick, creamy, and has doubled in size.

Step 04.

Pour the cooled chocolate mixture over the egg mixture, then carefully fold them together.

Step 05.

Sieve the flour and cocoa into the wet ingredients, then continue folding the mixture gently with a spatula just until everything is fully combined. Be cautious not to over-mix.

Step 06.

Pour the mixture into the prepared tin and carefully level it with a spatula. Place it in the middle of the oven and bake for 20 minutes.

Step 07.

While the brownie is baking, prepare the toppings. Cut the fondant-filled eggs in half and set them aside. Place the mini chocolate eggs into a pestle and mortar. Crush a few of the mini chocolate eggs, but leave some whole for texture. After 20 minutes of baking, remove the brownie from the oven and press the fondant eggs into the top, cut side up. Scatter over half of the crushed mini chocolate eggs as well. Return the brownie to the oven for a further 5 minutes.

Step 08.

Once baked, top the brownie with the remaining mini eggs. Allow it to cool completely, then place it in the fridge for about 1 hour to firm up. Lift it out of the tin using the strips of baking paper and cut it into squares to serve. For an extra festive touch, decorate with little Easter chicks if desired.

Step 03.

Bake until set and dry, for about 45-50 minutes. Turn off the oven and resist the urge to open the door; instead, leave the meringues in the oven for 1 hour to continue drying. Once cooled, spread the meringue cups with lemon curd and fill them with your favourite fruits.

Step 03.

In a saucepan, melt marshmallows and water together over low-medium heat, stirring constantly until fully melted. Pour over the cookie base and chill for 30 minutes.

Step 04.

Melt the chocolate in a microwave-safe bowl in 30-second bursts, stirring well after each, until fully melted (approximately 1 ½ – 2 minutes total).

Step 05.

Pour the melted chocolate over the marshmallow layer and spread it out gently. Arrange halved Easter eggs on top. Chill until set before enjoying.
